Ulrik completed his bachelors degree in nutrition science at Utah State University. There he participated in research groups investigating bacterial growth in yogurt as well as maternal folic acid supplementation. His Masters in nutritional biology was completed at University of California, Davis (UC Davis). His masters research was on methods to mitigate metabolic syndrome, and he is continuing this line of research here at the Univeristy of Oslo.
